1 1/2 cups extra crunchy peanut butter
2/3 cup safflower oil (any oil with a similar fat content will work, but it may have a different flavor)
1 cup brown sugar
1 1/4 cup brown rice syrup
1/4 cup unsweetened soy milk
1 Tbsp vanilla extract
1 tsp baking powder
2 cups all-purpose flour
shredded coconut
chopped walnuts
70% dark chocolate bar (Lindt's is vegan! And my dad works there...), smashed into pieces
Preheat oven to 350.
Grease a 9x13 baking sheet.
In a large mixing bowl, use a wire whisk to mix together peanut butter, oil, brown sugar, and brown rice syrup. Stir in soy milk and vanilla and mix well. Stir in baking powder. Add flour, 1/2 cup at a time, mixing well with a wooden spoon. Transfer dough to the greased baking sheet and press it into place.
Smush as many walnuts, coconut and chocolate pieces as you want into the cookie bar.
Bake for 20 minutes, or until edges are brown, but middles is still soft. Wait till cool to slice for best results.
