What a shitty weekend. My feelings got hurt. Some crazy awful things went down with those I love.  It's amazing what people can do to each other in the name of 'love.'

The vegan-ation is going well. Still a few dairy products here and there as we try to eat through, but nothing major. Last night I made vegan sloppy joe's, which were really good! You use vegetable protein crumbles, rehydrate with water and then mixed into this delicious sauce of green peppers, onion, spices, and tomatoes. We had some BBQ sauce (it was vegan!) in the fridge, so we added that. Really yummy. Rory and Ryan both loved it. I've never been big into sloppy joe's anyway, but it was tasty!

Tonight I'm making minestrone, with the ice and snow coming, it sounds cozy and delicious.

I've been focusing on my mind and body through this vegan transformation, to kind of pay attention to any differences, positive or negative.

My skin is clearer, not that I had a lot of break outs before. My energy is definitely up. I actually get hungry now. That sound weird, but I used to eat because it was time to eat and food was around. Food takes more thought and preparation, so the hunger trigger actually has time to go off. I don't feel sluggish after meals.

What I particularly like is having to put real thought and creativity into meals. I've found some great websites that help. It's so interesting how much of our food is based on meat and dairy! Even if this doesn't turn into a life long thing, I'm glad we're taking the time to try it and learn some new things, as well as try our food from a different angle.
